Healthy Crimble Crumble


Can you tell me what's better than a relaxing on sunny, spring Sunday watching your favorite film and tucking into comforting apple crumble? Absolutely nothing. Crumble has been my favorite dessert for as long as I can remember and growing up it would always be my first choice of dessert. This Sunday was craving a delicious crumble, so thought I'd get my bake on and whip one up. Sweet juicy apples with a perfectly baked, slightly crunchy, crumbly topping, mmmm, perfect! Don't you wish you were coming for Sunday lunch?

Obviously though crumble is usually full of butter and sugar, so I wanted to make it with healthier alternatives. I used oats/coconut flour/nuts/seeds for the crumble and replacing the butter for coconut oil and sugar for maple syrup, making it gluten, dairy and refined sugar free! I also added blueberries to the mix making the perfect crumble twist.
You'll be happy to know, It's the perfect crumble that tastes exactly the way a crumble should taste while also being incredibly good for you. The cinnamon, crisp of oats and seeds on top of the sweet maple apples and the oozing, juicy bluberries make each mouthful a flavor sensation. Top with  your favorite ice cream, or try a  'healthy' banana ice cream, or my personal favourite coconut yogurt to make the perfect dessert. Due the the simple, amazing ingredients this crumble is perfect any time of the day, even enjoy the leftovers for warmed up breakfast with a dash of almond milk. 


- 2 Cups Oats  
- 1/2 Cup Coconut Flour or ground almonds)
-  1/2 Cup Seed Mix (I used Pumpkin and Sunflower seeds) 
- 3 Tbsp Coconut Oil
- 1/3 Cup Maple Syrup 
- 2 Tsp Ground Cinnamon
- 1 Tsp Ground Ginger

Apple & Blueberry Layer:

- 6  Medium Apples (I used Pink Ladies)
- 1 and a 1/2 Cup Bluberries
- 1 Tbsp Maple Syrup
- 1 Tsp Cinnamon  

First start with making the crumble topping. Place the oats, seeds and flour in a large bowl and mix together. Then place your coconut oil, maple syrup, cinnamon & ginger in a saucepan and gently heat until the coconut oil has fully melted, stir until everything is fully mixed. 
Pour this mixture over your oat/seed/flour mix, stir together until your dry mix is nicely coated and pop this to the side. 

Next make your fruity layer, peel your apples and remove the core and cut your apples into bite sized pieces. At this point pre-heat your oven to 180c. 
 Place the apples in a large saucepan along with your blueberries and enough boiling water just to cover the bottom of the pan. Add the maple syrup and cinnamon and place the lid on top of your pan letting it simmer for about 10 to 15 minutes, until all the fruit is nice and soft. 

Once your fruit is soft get your baking dish and place it in the bottom and then spread your crumble mix over the top. Place in the oven, allowing it to bake for 25-30 minutes until the top is nicely browned. 

Serve in your favorite bowl, cuddle up and finally enjoy!
