Halloween Superfood Series - After Dinner Cacao Peppermint Truffles

Halloween is an excuse for chocolate, right? So what about these 'After dinner cacao peppermint truffles' for a treat? 

I remember as a kid absolutely loving the After eight mints which were little squares of chocolate with a creamy mint filling, mmm! Infact i think I pretty much loved anything chocolate mint... the dark mint Poppets were also a fave! So I decided I want to create a 'energy ball' style cacao peppermint healthy truffle (if you can even say that in one mouthful...haha) A bit like the cacao mint bounce balls if you've ever tried them? which again are delicious. 

To make these 'truffles' you need hardly any ingredients, powerful food processors/blenders or any crazy equipment. In fact I think they took me under 10 minutes to whip up and make. If you like the chocolate mint combo these are exactly for you containing fibre, healthy fats, protein meaning they're great as a healthy dessert, sweet curbing snack or post workout treat (I took some for the girls teaching a class and they certainly agreed)

I've used a blend of raw cacao powder which is chocolate in it's purest form meaning unlike coco powder isn't sweetened, processed or got any added sugars. Raw cacao containing lots of essential vitamins and minerals such as iron and magnesium while being an antioxidant power house. It can imrpove blood circulation, support heart functioning, help cardiovascular endurance, improve digestion and in chance mental and physical well being. I've also used a vegan protein powder along with peanut butter to pump up the protein and healthy fats while also adding more textures and flavour. 

I can assure you when you make these they will be instantly devoured. So quick get adding them to your Halloween treat list!

Ingredients (Makes 7-8 balls)

-  1/4 cup smooth peanut butter (or nut butter of choice)
- 1 scoop of chocolate protein powder (I used a vegan blend)
- 1/2 cup ground almonds 
- 2 tbsp cacao powder (or coco powder but check for sweeteners)
- 1 tsp peppermint extract 
- 1 tbsp chia seeds (optional)
- 1/2 tbsp agave nectar/maple syrup
- 2 to 3 tbsp unsweetened almond milk (or milk of choice)

- Cacao nibs or more cacao powder to roll in (optional) 

Combine all of the following ingredients in a large mixing bowl. Mix together until fully combined and a sticky, gooey dough has formed. You may need to add more milk or ground almonds depending on to consistency. 

Grab and seperate the mixture and roll into balls. It should make around 6 -7 depending on the size you want them. Roll in the cacao nibs or extra cacao powder. 

Place in an air tight container and store in the fridge or freezer. I love placing mine in the freezer to chill for 20 - 30 minutes before enjoying them!
