Halloween Superfood Series: Healthier Vegan Twix Bar

It's nearly Halloween guys, are we excited? Yes! However the sad news it's the last day of my Halloween super food series! Ah dammmnnn. I hope you've all enjoyed the recipes.

 Anyway, when packing up the Halloween sweets for the kiddies last night, I came across one of my all time old favourites, twix bars! Twix along with mars bars used to be my favourite chocolate to treat myself too, especially at Halloween. So I of course wanted to get creative and make something similar yet a little healthier, vegan and tummy friendly. Let me tell you, I did just that.





I mean common who doesn't loooooveee anything with caramel and chocolate and oh peanut butter. Honestly this copy cat version of the shop bought Twix is a complete game changer, you really wont believe they're gluten free, dairy free, refined sugar free, grain free and vegan. Yep these little bites are heaven are surprisingly good for you, meaning they're guilt free and tummy friendly, with no hidden nasties. Meaning everyone can enjoy them! Yep they still taste just as good as your old Twix, if not BETTER!




To recreate a shortbread style base I used oat, coconut and almond flour which created the texture perfectly. It's fluffy, crispy and crumbly just like a Twix should be. While packing in healthy fats, carbohydrates and fibre.



I wanted to make the caramel for these as easy as I could yet indulgent and sweet. I made a delicious combination of coconut oil, peanut butter, maple syrup, a pinch of salt and I went all out and stirred in some crunchy cacao nibs. It came out perfectly smooth, addictive, sweet, packed with healthy fats, it's also got the perfect crunch and textures from the cacao nibs.

And of course these little beauties needed something to finish them off, a gorgeous, rich homemade chocolate layer made with coconut oil, cacao powder and maple syrup to sweeten. Yes, making your own delicious chocolate is as easy and combing three ingredients.


I was honestly beyond happy with how amazing these tasted and the rest of my family thought so too. These are so brilliant to make and store in your fridge to pick at this Halloween! (although I can assure they wont last long) You'll love them, your kids will love them, you husband will love them, you Nana will bloody love them!



 Anyway whats better and more indulgent than making your own healthy Twix bars?  Mmmm nothing.

Ingredients 

For the crust 

- 1 cup of oats 
- 1/2 cup coconut flour
-1/2 cup ground almonds 
- 1/3 cup melted coconut oil
- 3 tbsp maple syrup
- 1/2 tsp vanilla extract 
- 1/4 tsp salt 

For the caramel 

- 1/2 cup runny peanut butter
- 1/3 cup melted coconut oil 
- 1/3 cup maple syrup 
- 1/4 tsp salt 

For the chocolate 

-1/4 cup melted coconut oil
- 1/4 cup raw cacao powder/unsweetend coco powder
- 2 to 3 tbsp maple syrup 

Pre heat your oven to 160c. 

Start making the crust by placing your oats into a blender and blitz them until they form a flour consistency. In a large bowl combine your oat, coconut and almond flour then add your melted coconut oil, maple syrup, vanilla extract and salt. Mix this together until fully combined and a crumbly biscuit mix and formed. 

Grease a small/medium baking pan with a little coconut oil. Press your dough into the pan, pressing it firmly to create a smooth even layer. Place this in the oven for 10 - 15 minutes or until browned at the edges. Allow this to sit and cool completely. 

For the caramel combine all of the following ingredients in a small saucepan and heat gently until all of the ungredients have melted and fully mixed together. Pour this evenly over your crust layer. Then put your tray into the freezer for 30 - 40 minutes until the caramel has set. 

For the chocolate topping mix the coconut oil, cacao powder and maple syrup together until smooth. (alternatively you could use melted dark chocolate, just ensure it's 75% or above) 
Once your caramel has set, pour your chocolate evenly over the top and place this back into your freezer to set for around another hour. 

Once set, slice into bars and store in the fridge or freezer. Be patient with the crust layer as it may have hardened slightly while being in the freezer.
