Halloween Superfood Series - Vanilla Almond Crunch & Quinoa Granola


Happy Monday! I hope you all had a fabulous weekend. I have something a little different kicking off for you this week... Oh and it's something extremely delicious.

We all know Halloween is approaching and common, Halloween without a good deal of cheeky treats is a crime, right? I'm obsessed with Halloween and I've been Halloween prepping like crazy. So I thought it would be a good idea to share some new, exciting recipes with you. For the next few weeks I'm going to be giving you a variety of chocolate treats, spooky snacks, delicious bakes and comforting meals in my 'Halloween Superfood series'. EVERY SINGLE DAY!  

All of these recipes will be vegan, gluten & dairy free and refined sugar free etc etc. Meaning you can all get planning your treats and sweets!

This selection of recipes will all be packed with goodness, using simple ingredients, natural superfoods, giving you plenty of energy and comfort. So if you're looking for a healthier twist on your Halloween treats or a easy comforting Autumn dish which will nourish you inside and out, you've come to the right place. You can curb the chocolate cravings or warm your insides with any of these recipes, so if you weren't already in the Autumn mood, you will be now. From some soft 'cheesy' sweet potatoes, gooey 'blood filled' cupcakes, secret green popcorn and ghostly rice crispy treats, each of these recipes will satisfy you and hopefully give you some new and exciting ideas for Halloween.

Anywaaayyyy starting with the first recipe which is one I am currently addicted with. It may just be the BEST granola I've ever made, yes the BEST! Vanilla Almond Crunch & Quinoa. Yes it's by far a new favourite. I feel like I've cracked it in the world of granola, trust me it's better than any shop bought by farrrr!

The base of this granola is wholesome oats and quinoa which are both packed with good-for-you fibre and protein which will help keep you fuller for longer. They're also a brilliant source of complex carbohydrates which will give your body lots of energy meaning this granola is perfect to start your day! The combination of almonds add the perfect crunch, textures as well as providing your body of healthy fats and protein. The blend of flavours in this granola all combine together with burst of vanilla, carmely maple, almond crunches and spicy cinnamon creating an amazing sensation in your mouth. The pinch of salt make all the difference too, don't leave it out!

Overall, I feel like it's the PERFECT granola for Autumn.

 When I make my own granola I usually use coconut oil however in this one I used olive oil which changed the game completely. Olive oil has numerous benefits such as reducing risks of breast cancer, diabetes, heart problems and arthritis, along with boosting metabolism, aiding in weight loss and helping digestion. Olive oil yes does have a strong flavour however it's worked like an absolute dream!

Honestly, this recipe really isn't one you want to miss it' sticky, crunchy, salty and sweet which makes it incredibly dangerous. I swear I could eat the whole batch in one go. Enjoy it for breakfast drowned in milk, add to your smoothie for some crunch, sprinkle over some yogurt for a delicious snack or grab a handful (or two) and scoff it down on it's own. Either way I hope you loooove it!


 1 1/2 cup rolled oats (gluten free if needed)
 1/2 cooked uncooked quinoa 
 1/2 cup whole almonds
1/2 cup flaked almonds 
 1/4 maple syrup 
 1 tsp vanilla extract 
1 tbsp olive oil 
1/2 tsp salt 
1/2 tsp cinnamon 

Pre heat your oven 160c. 

 In a large mixing bowl place your oats, quinoa and flaked almonds. Chop your whole almonds roughly into chunks and add them to the bowl. 

Add your oil, maple syrup and vanilla to the dry ingredients and combine until fully coated. Then stir in your salt and cinnamon. 

Spread your mixture evenly on a lined baking tray and bake for 30 - 45 minutes. Remember to keep stirring your granola around every 5 - 10 minutes so it doesn't burn. When the granola is golden brown remove from the oven and leave it to cool. 

Keep it stored in an air tight container or pretty jar and enjoy!
