Meat Free Monday - Easy Vegan Banana & Date Cookies


It's finally becoming more and more like Autumn which as you can probably tell excites me massively. Earlier nights, big jumper weather, cinnamon tastes & scents and cuddle up with a hot chocolate is like sweet sounds to my ears. It also means Halloween is on the way. I think Halloween must be one of my favourite times, as you can see by my current little 'Happily Holli Halloween' twist I'm already in the Halloween mood.

I'm currently in the process of some serious Halloween recipe testing for you guys which I'm so excited to share with you. I'm going to be bringing to you a 'Vegan Halloween super food series' featuring some delicious bakes, super smoothies & comforting dishes for you to have a go at! These recipes will all be based around simple, natural ingredients which will give you a different twist on your usual sugar filled Halloween treats. Giving you brilliant flavours and taste but packed with super foods to fill you with energy and give you an extra nutrition boost!

Anywaaayyy moving onto today's post... only the best Easy Vegan Banana & Date Cookies, say whatttt? yes these little beauties I think are my current favourite snack. Once I made one batch it's safe to say they were gone within one day...opps. Yes, they're a absolute dream! They're so easy to make with hardly any mess, any ingredients, inexpensive, and nutritious, meaning anyone can have a go at them!

Each cookie is soft and chewy from the bananas and oats combined with the hint of peanut butter
running perfectly through them. The chopped dates and extra caramely sweetness and go perfectly gooey when baked. The combination of oats and nuts are packed with fibre which will help keep you full and satisfied. Full of natural sugars and ingredients they'll give you an extra nutritious boost while fixing your sweet tooth. These cookies are perfect to grab in the afternoon with a cup of tea to give you a burst of energy, you could even have a few for a on the go breakfast or crumble one over your smoothie bowl! 

I'm not even joking when I say these cookies took me no more than half an hour to whip up. All you have to do is throw all of the ingredients in a bowl and bake them. They're also so comforting which is perfect as the colder days and nights come creeping in. Perfect. 

So what are you waiting for? I hope you love them as much as I do! 

- 1 cup of oats (gluten free if needed) 
-1/2 cup ground almonds (or extra oats ground into a flour)
- 3 over ripe bananas 
- 5 large medjool dates
- 1 tbsp peanut butter 
- 3 tbsp agave/maple syrup 
- 1/2 tsp vanilla extract (optional) 

Pre heat your oven 180C. 

Start by combing your oats and ground almonds in a large mixing bowl. 
Then chop your dates into tiny pieces an place to one side.  

Next mash your bananas and mix the in the bowl with the remaining wet ingredients until fully combined. Throw in your chopped dates and stir well. 

Take about a tablespoon of your cookie mixture and spread out on a lined baking tray to form a flat cookie shape. You should make around 8 - 10 cookies. 

Bake the cookies for 10 - 15 minutes until they turn golden brown on top.

Leave them to cool before serving and then dig in!
