Vegan Lunchin On The Go

I swear I spend my life counting down the hour till I can next eat, I love food okay.... oh especially if I have an extra delicious lunch prepared. It gets me slightly excited.

 Being out and about all the time however can make incredibly hard to grab something which isn't an overpriced soggy sandwich, teenie tiny serving size or a quick biscuit fix. So food prep can be a saviour but again we want it to be easy peasy!

Lunch time can be one of the awkward times when you don't really know what you fancy and you just opt for a plain old sandwich or boring pasta (I know pasta is amazing but hear me out) Sometimes we want to spice it up a bit, so I wanted to share with you a few of my favourite, easy vegan lunches which are also great if you're on the go! Whether it be work, school, college or need something yummy and quick these lunches will fill you with energy and satisfy you for the rest of the day ahead! Vegan or not, give them a go, you may be pleasantly surprised.

Quinoa Edamame Salad

This is my favourite lunch, at home or on the go, I honestly have it most days! Plus it's so so easy to throw together, pop in some tuber wear and you're good to go. Basically just mix all the following ingredients together along with a good squeeze of lemon and drizzle of apple cider vinegar, and bamn! You're done! The hummus is completely optional but I feel it makes this salad even better, then again hummus makes everything better...


 - 1/2 cup cooked quinoa 
- 70g edamame beans 
- 1/4 cucumber 
- Fresh spinach
-Fresh coriander
- Pumpkin seeds
- Half a fresh lemon
-Apple cider vinegar 
- Hummus (optional)  

Open Face Chickpea Filler Sandwich 

Let's be honest no one can deny a good sandwich but of course the filling is key. I love making open face sandwiches because you can pile the filling nice and highhhh! Usually good old avo on toast is a winner in anyone's eyes however I wanted to switch things up a bit with this chickpea & avocado smash. Avocado mixed with chickpeas packing in fibre and protein with a tsp of creamy tahini and squeeze of lemon juice to add the perfect tangy, twist. I also love to add a pinch of chili flakes for the extra hit! Then pile it high with fresh, sweet cherry tomatoes and fresh coriander and a drizzle of olive oil, MHMMM!! 

 

- 1 avocado 
- Handful of chickpeas
-1 tsp tahini 
- Juice of half a lemon
- Pinch of black pepper
- Pinch of chilli flakes (optional)

Easy Chickpea & Hummus Wrap 

I love love LOVE wraps especially filled with all of my favourite ingredients. Chickpeas, hummus, cherry tomatoes, chopped cucumber, fresh spinach, quinoa and a garnish of coriander. All packed into a fresh tortilla wrap, I love the BFree gluten free quiona & flax wraps! Then wrap it all up and pop it in a box or bag which is great if you're on the go or need a quick lunch fix!



- 1 tin chickpeas (washed & drained) 
- Hummus 
- Cucumber
- Tomatoes (Plum are my favourite)
- Fresh spinach/salad leaves
- Cooked quinoa 
- Fresh coriander
- Wholewheat/gluten free wrap (I use Bfree Quinoa & flax wraps)
