Beanie's Recipe Series - 'Christmas Pudding' Coffee Energy Balls

Christmas and coffee. My ultimate combination. I mean what could be better than festive flavoured coffee?! I don't think anything... Yes, you heard! The company Beanie's (my favourite coffee!!!) very kindly sent me 3 of their festive flavours in the cutest mini 'xmas stash'. As a Christmas and coffee addict & enthusiast this made me wayyyy to excited! I opened the package like an excited child to 3 amazing flavours... Christmas Pudding, Mulled Wine and Christmas Spirit. Oh yesssssss! Winner winner!

Christmas and coffee! In one cuppppp!!! And if it couldn't get any better Beanie's coffee is just 2 calories per cup, sugar free, gluten, wheat & dairy free, nut free and suitable for Vegans!! The perfect way for anyone to jazz up your coffee break.


Obviously receiving these amazing flavours meant one thing... my head was ticking with ideas! Recipe ideas! I wanted to branch out a lil further and create a festive treat with each of Beanie's festive coffee's. So with the thoughts whizzing around, I think one was quite clearly easy... CHRISTMAS PUDDING.


I've seen a few people over on Insta and Pintrest creating lil, bite sized healthier Christmas pudding energy balls. I wanted to have a pop at my own version and of course, what's better than the coffee twist? I'm not going to lie when I say these little bites are absolutely delicious!!! I'm not gonna lie I didn't epect them to taste as good as they actually do, I reaaaalllyyyy struggled to stop at just one... or two... or three...


 I've packed them with nourishing wholesome ingredients which will give you an amazing boost of energy! And what I love is that you feel great after eating them, as they won’t bloat you out like traditional versions and they are gluten free too! They're the perfect combination of fruit, sweetness and spice with the hints of coffee travelling through. HONESTLY, the flavours through these babies will get your tastebuds hummminggg.... I'd replace them over a traditional Christmas pudding any day. Oh and along with the amazing cream topping made from the blend of cashews and lemon. They're just the dream!

 Plus they look cute (perfect for parties), fun to eat, they're really easy to whip up and completely guilt free. Meaning they're the perfect addition to any Christmas gathering, festive snack or little dessert. They'll be the new Christmas delight for anyone, if you can dare to give them away that is...






For The Balls

- 1 cup oats
- 1 cup ground almonds 
- 1 cup dried cranberries 
- 1 cup dried raisins 
- 2 tbsp peanut butter
- 2 tbsp coconut oil 
- 2 tsp Beanie's Christmas Pudding coffee
- 1 tsp cinnamon 
1/2 tsp ginger

For The Cashew Cream 

- 1/2 cup soaked cashews (for at least 4 hours)
- 1 tbsp fresh lemon juice 
- 2 tbsp almond milk 
- 2 tbsp agave syrup 
- 1 tbsp coconut oil

Topping

- Goji berries
- Mint leaves



Start by making the Christmas energy balls, place your oats in a food processor/blender and blitz until a flour has formed. Place your oats, ground almond, cinnamon and ginger in a large mixing bowl. Place this to one side.

Then place your cranberries, raisins, peanut butter, coconut oil and Beanie's coffee in a food processor/highly powered blender. Blend together for about 4 to 5 minuets until all of the ingredients have blended together and formed a thick sticky mixture.

Add your sticky mixture into the mixing bowl with your dry ingredients. Mix this together until fully combined. Roll the mixture into evenly sized balls. Place on a tray/plate and pop in the freezer for 10 minutes. Take them out and keep in the fridge while you make your topping.

Next move onto your cashew topping. Ensure you've soaked your cashews for at least 4 hours before or overnight if possible. Drain your cashews and place all of the following ingredients in your food processor or blender and blend until smooth. Pop this in a bowl and place in the freezer for 15 - 20 minuets.

Take your puddings and topping and spread the cashew cream evenly over the top of each ball. To finish garnish with goji berries and a tiny mint leaf! Cute or what?
