Hey my lil chickpeas! Decembers getting a bit hectic now right? It certainly is for me! Last minute deadlines, rushing about, gatherings, shopping etc. WHILE still trying to fit in my love for watching Christmas films (oh yes we MAKE time for this)

Nah in all seriousness, this time of year will always be my favourite and even more so this year. After some very bad news recently, I've decided I'm going to make this the best Christmas I possibly can. Never taking a second for granted. I'm so so lucky to have so many wonderful people I love in my life and this year I'm really going to cherish that.

Anyway, moving onto today's post... I BET you're all after that lil last minute Christmas shopping right? Oh yeah, the busy busy shops while you're in a panic for your last minute Mum's pressie? Am I right, or am I right?

Well, I'm here to answer your wishes! Last year with little money and not much time on my hands, I decided to get create and put my talents to good use. I made gifts for my Nana and not just any gifts, oh yeah,,, Homemade healthy granola jars! She absolutely loved them, win win. I created two different flavour combinations and decorated pretty granola jars in Christmas ribbons and tags! She appreciated it so so much and more importantly devoured the granola.

This year of course I wanted to do it again but mix it up slightly with some other EASY healthy DIY food gifts and then I thought why don't I pop this in a blog post for you guys too? See down there for dancing, up there for thinking as my dad would say... yep, yep, no... haha.

Moving on... here not only have a supplied you with two amazing festive granola recipes yet an indulgent chocolate orange bark with crunchy hazelnuts and some mouth watering, salted caramel truffles. the perfect treats for the chocolate, sweet tooth lovers!

So now there is no excuse, these festive homemade gifts are perfect and easy to whip up and give to your fellow foodie lovers! Or anyone really, trust me they're delcioussssss!


Granola 2 Ways - Gingerbread & Chocolate Orange 


Gingerbread 

The perfect blend of Christmas scents and spices with the right bursts of ginger travelling through. along with crunchy nuts and gooey, caramel dates for and extra sweet twist.

- 3 cups rolled oats
- 1 cup of nuts roughly chopped (I used cashews & walnuts)
- 2 tsp ground ginger 
- 1 tsp cinnamon
- 3 tbsp coconut oil 
- 3 tbsp agave syrup (or other sweetener) 
- 1/2 tsp vanilla extract 
- Pinch of salt
- 1/3 cup chopped dates 

Chocolate Orange 

For the chocolate lovers! Perfectly indulgent breakfast, yogurt topper or grab and go snack. flavoured with the perfect blend of chocolate and orange with roasted hazelnuts and sweet cranberries.

- 3 cups rolled oats 
- 1 cup chopped hazelnuts 
- 3 tbsp raw cacao powder (or unsweetened coco) 
- Juice of
an orange 
-Zest of half an orange
- 3 tbsp coconut oil 
- 3 tbsp agave syrup (or other sweetener) 
- 1/2 cup dried cranberries


Pre- heat the oven to 160c. Line two baking trays with baking paper.

Combine all of the dry ingredients into a large mixing bowl. Melt your coconut oil and stir into the dry ingredients with the rest of the wet. Make sure everything is fully coated.

Spread over your prepared baking trays and baking the oven for 25 - 30 minutes or until crisp. Keep stirring it around during baking to ensure it doesn't burn!


Chocolate Orange & Hazelnut Bark 



Orange, crunch, sweet, indulgent. A complete chocolate dream! Try this easy homemade, bark for the perfect twist on your traditional Christmas chocolate. 

- 200g Dark Chocolate (over 75%)
- 1 tbsp coconut oil
- Zest of an orange
- 1/2 cup chopped hazelnuts

Melt your chocolate and coconut oil in a sauce pan on a low heat. Pour the melted chocolate over a tray before sprinkle over the chopped hazelnuts and orange zest. Place in the freezer to set before breaking into pieces.




Salted Caramel Truffles 



Melt in the mouth truffles with caramely dates and ground almonds dipped in luxurious thin layer of raw chocolate and a sprinkle of salt. The perfect guilt free sweet treat!

- 15 Medjool Dates (soak before to soften)
- 1 1/2 cup ground almonds
- 1 tbsp coconut oil
- 1 tbsp peanut butter (or almond butter would work fab!)
- 2 tbsp cacao


Start by placing your dates into a high powdered blender/food processor, blitz until a smooth caramel starts to form. Add in your ground almonds, coconut oil, nut butter and cacao. Blitz again until everything is fully combined and a soft, sticky mixture has formed. Roll into balls and place in the fridge to set!
