Lemony Snowball Truffles


Hello my lil chickpeas. Only 2 more days now!!! Are we all ready for Christmas? I think I nearly am... apart from being caught my a nasty cold and IBS flare you. Just in time for Christmas, how lovely. Damn you. I guess that's the trouble around this time of year we're that busy rushing around and around it's so easy to catch these silly bugs flying around here there and everywhere. Plus the pressure of feeling tippdy top 24/7.

I think sometimes we just need to sloooooowwww it right down. And chillll... It's okay if you feel a little under the weather or not 100% this time of year. 

Either way. I'm bringing to you a last little sweet treat right before Christmas day. It's one to raise the spirits. It's a recipe I've made so many times and adore! I realised how cute these little balls looked and actually reminded me of little snow balls. (Okay lets ignore the fact they're slight yellow... you know the quote... don't eat yellow snow...haha)

And with that I bring you these amazing tangy lemon & coconut snowball truffles. So if you love lemon and coconut you're going to be all over these beauties. If you love anything sweet and satisfying. They're just the thing for you.

These little bites are the perfect energy boost! The lemon and coconut mix together to create a sweet, citrusy, coconuty sensation while bringning a slight tropical vibe. Which yes isn't traditionally 'festive' however they're great if you want a lighter alternative...

 They also have many nutritional benefits meaning you can satisfy the sweet tooth while packing in the goodness! The mix of oats, chia seeds, and coconut pack in the fibre along with some omega-3 fatty acids. The turmeric has powerful anti-flamatory effects along with being high in antioxidants helping prevent many diseases while adding a little twist on the flavour. They're also gluten free, dairy free, refined sugar free, vegan and completely guilt free!

Just one or two of these bites is all you need to satisfy your sweet tooth and tide you over till your next meal. Along with their complete yumminess and amazing health benefits they're so easy to make! They're great to add to any Christmas buffet or for a quick snack over the festive period giving you a sweeet boost. They're perfect paired with a glass of wine or two.. Just saying, it's balance after all right? Either way they're ultimately addictive. You wont regret it! 

- 1 cup oats (gluten free if needed)

- 1 cup desiccated coconut (plus extra for rolling)
- 1/4 tsp turmeric
- 1/2 tsp ginger 
- 1 tbsp chia seeds 
- A pinch of salt 
- Juice of 1 small lemon 
- Zest of 1 lemon
- 3 tbsp maple syrup/agave nectar 
- 1 tbsp coconut oil 
- 1/2 tsp vanilla extract (optional) 

Place your oats, coconut, tumeric, ginger, chia seeds and salt in a high powdered blender/food processor and blitz until combined and oats have turned into a flour. 

Next melt your coconut oil and place with all the remaining wet ingredients into the blender/food processor along with the lemon zest. Pulse together until fully mixed and a stick like dough has formed. 

Place this mixture into a bowl and leave in the fridge for around 20 minutes. 

Take your dough out of the fridge, roll into balls before rolling them in some more desiccated coconut. Place these in an air tight container, store in the fridge or freezer and grab one whenever you fancy!
