Chocolate Protein Fudge Bites

It's friday!!! Wahhooo. Even though that mean absolutely nothing to me, I never really know what day it is... Haha. Every day merges into one in Holli's world. Like a Monday is never really Monday and a weekend is never really a weekend. Really every day is just fabulous (well we can wish...)

But hey lets use it as an excuse to bring a lil weekend treat to ya. So first things first, you'll love me for this one. But I'll warn you... It's a rather dangerous one. A deliciously dangerous one.

Chocolate protein fudge. The beginning on a scary food love affair. I mean it started on a dreary Thursday morning when I was even really planning on a recipe, I kinda just threw anything into a bowl and prayed for the best... But shhh lets pretends it's some magically planned out creation.

I mean a beautiful creation was born, I was more than excited when I realised I actually wanted to eat the mixture before it had set. You always know that's a good sign...

It's the kind of recipe that as soon as you try you know an addiction is about to arise. I mean I ate the whole batch in a day... Is that bad?

Not only that but it's super easy. Raw, vegan, gluten and dairy free. AND my excitement grew as I realised how many variations you can create. Gosh it's a gooden.

Snack heaven in my eyes. Fudgey, gooey, hearty, chocolatey, sweet and indulgent in the healthy way. I mean common can ya get anymore perfect? I mean I'm dreaming of another batch right now as I am writing this. That's the issue for a food blogger, you just want to eat more as you write. Oppsieeee.

In this recipe I used a pea protein but you can use any protein powder you want, a chocolate one would work perfectly. I just didn't have it on hand but hey ho. You can also mix up the nut butter, don't like peanut butter? Go all out with almond or cashew. Oh yes.

 The world is ya oyster.

I'm also thinking of the ways I could change this recipe up! The endless flavours, I mean what about a strawberry fudge? Cinnamon bun!! Oh yes! Or adding some chocolate chips, chopped nuts or dried fruit to the mix. OR even a double layer fudge, now we are talking! I mean you could go on forever!

For the fudge

1/2 cup smooth peanut butter
1/4 cup coconut flour (ground almonds would also work)
2 tbsp pea protein powder (or alternative, chocolate protein powder would work well) 
1 - 2 tbsp cacao/coco powder
3 - 4 tbsp agave/maple syrup 
2 - 3 tbsp unsweetened almond milk 
1/2 tsp vanilla extract (optional)
Pinch of salt 

For the chocolate topping 

1 tbsp cacao/coco powder
1 tbsp coconut oil 
1 tbsp agave/maple syrup 

Line a small tray with baking paper. 

In a large bowl place the peanut butter, coconut flour, protein powder, cacao, agave/maple syrup, vanilla and salt. Mix together until it start to combine. 

Take your almond milk and add gradually until a thick mixture forms. If the mixture if too wet add more coconut flour and 
if it's too dry add more almond milk. 

Place your mixture into the tray and spread it out and press down evenly. 

Next make your chocolate by melting your coconut oil and combining in a small bowl with the cacao and sweetener. Mix well. 

Drizzle your chocolate over the top of of your fudge. Place in the freezer for around 30 minutes to set. Once set take out and slice into whatever size bites you fancy, it should make 15 - 18. 

Place in an air tight container and keep stored in the freezer or fridge for a softer fudge!
