Vegan Cocoa Boost Cookies


Happy Monday my lil chickpeas! Yep you'll be happy to know I'm back and raring to go with recipes for you! Firstly kick off with a recipe I may quite frankly have fallen in love with. Vegan Cocoa Boost Cookies.

Recently I've been lucky enough to have the privileged to be working with the lovely people form Jake's Boost who create all natural Nut & Seed butters. (aka could my life get any better?) I was more than happy when they came to me and asked me to try out some of their nut butters to create some recipes and I couldn't wait to collaborate with them.

All of their Nut & Seed butters and completely natural made with various nuts and seeds providing you with incredible benefits. They do 3 different types, a super boost spread, tiger boost spread and a cocoa boost spread. They also sell little portioned sized pots with fruit spoons for the perfect pick me up snack. I received the cocoa boost spread (chocolate mmm yes please!) I swear this stuff is the perfect healthy indulgence. It's rich, chocolatey and sweet, blended with peanuts, chia seeds and cacao nibs for that extra chocolatey crunch.

Of course I had to create some super yummy, indulgent treat with this nut butter. It meant one thing cookies. Crispy, soft, fluffy, vegan cookies. YES please. I mean come on, a batch of freshly baked cookies on a lazy Sunday afternoon makes the world a much better place right? Plus the house smells amazinggggg!!!! That's got to be a bonus!

Really, sometimes all you need is soft, delicious cookies with a cup of tea and your heart is content.

Hell yeah.

Made with ground almonds and coconut flour making these lil babies completely gluten free! And they bust any chocolate craving just like that! Trust me you're gonna wanna try them. Oh damnnn.

These cookies have the most amazing, crumbly yet fluffy, dark, nutty biscuit base with the cacao nibs and gooey chocolate chunks travelling throughout. They're completely what you want in a cookie, perrrfection.

1 1/2 cups ground almonds 
2 tbsp coconut flour 
1 190g pot Jakes Boost Cacao Superfood Nut Butter (or alternative)
2 tbsp cacao powder 
1/4 cup agave syup/maple syrup 
3 tbsp melted coconut oil 
2 tbsp coconut sugar 
1/2 tsp baking powder 
1/4 tsp vanilla extract 
1/2 tsp Baobab Powder (optional) 
100g dark chocolate (above 75%)

Pre heat your oven to 160c and line a baking tray with baking paper. 

In a large bowl place your ground almonds, coconut flour, baking powder, coconut sugar, cacao and Baobab powder (if using) and mix together. Place the bowl to one side.

Chop your chocolate into large, rough chunks and place to one side. 

In a small saucepan place your melted coconut oil, nut butter, and agave syrup. Heat gently until all melted and fully combined. Remove this from the heat and pour into the bowl with all of the dry ingredients and the vanilla extract. Mix together until fully combined. Then stir in you chocolate evenly. If the dough is too crumbly at this point add a little non - dairy milk. 

Place your dough in the fridge for 10 to 15 minutes until its hardened and stuck together a little easier. 

Grab a handful of the mixture and spread out evenly on your tray into cookie shapes. It should make around 6 to 7. 

Place in the oven for 20 minutes or until starting to crisp on the outside. Remove from the oven and allow to sit and cool while they set. 

Dig in and enjoy!
