Turmeric & Chickpea Cauliflower Rice | The Perfect Side Dish


Summers on the way chickpeas! Aren't you just loving this better weather? I am. Literally the sun picks up my mood so much! It's so nice to see people about too! It just make you want to be up and doing things. 

On that note, it also means summer food/recipes are on the way. Ah BBQ weather.. Yes pleasee! So, let's get cooking, starting with this Turmeric & Chickpea Cauliflower Rice! It's a game changer.

If I'm honest this recipe is one I've actually loved for a while and is one I kinda just whipped together but I've been waiting to share it. But now is the right time, as it's the perfect summer side dish or light, easy main to whip up when you're not fancying hour in the kitchen when the suns out! Honestly, you have to try it! 

If you've not heard of cauliflower rice, cauliflower rice is a great alternative for anyone looking to cut carbs or pack in some extra veggies! You won't even know it's cauliflower! Not that there is anything wrong with rice however I sometimes hate the bulky way it leaves me feeling. This recipe is a super healthy option if you're not the biggest rice fan like me! 

You'll also notice the amazingly, vibrant yellow colour! The added turmeric packs in the flavour, brightness and numerous benefits. Turmeric has great anti - inflammatory and healing properties! I've also added cumin for an extra boost of flavour and some tahini which adds a slight nuttiness and creaminess to the dish. At last minute I've thrown in some chickpeas and spinach, again boosting the nutrients and protein! 

This dish is literally one of the easiest meals or side dishes I've made yet one of the most delicious! Packed with flavour it's also, vegan and paleo friendly along with being gluten free and full of goodness! 

As I said feel free to serve on it's own or place it as a lil side dish with your choice or protein Tuna steak or baked tofu for vegans would work great! And some extra veggies of course, asparagus is my fave (and currently in season too!) 

Serves 2 (as a main) or 4 - 5 (as a side dish)

1 small cauliflower head 
1 can of chickpeas (drained & rinsed) 
Handful of spinach 
2 tsp turmeric 
2 tsp cumin 
1/2 tsp graham masalsa
1 tbsp tahini 
1/2 tsp apple cider vinegar
50g fresh coriander
Salt & pepper

Start by grating your cauliflower head in a bowl and place to one side. Drain and rinse your chickpeas and also place to one side. Then roughly chop your coriander. 

Start by heating a little bit of coconut or olive oil in a frying pan. Then place in your grated cauliflower, all the spices and apple cider vinegar. Reduce to a low/medium heat and stir around for about a minute.

Then add your chickpeas, coriander and tahini to the mix. Give it a stir and continue to saute for another 1-2 minutes.

Lastly, throw in your spinach and allow it to wilt. Then remove from the heat and serve as a side dish with some protein and veggies or as a main meal with some fresh coriander, veggies and an extra drizzle of tahini.
