01:56

Ahhhh! It feel so good to bringing you recipes again! And today we are talking cookies. Yep, we all love them. Don't tell me you don't.

This recipe was firstly inspired by the fact yesterday was National Homemade Cookie Day, who have thought? Aka the perfect excuse to get my Sunday bake on. Secondly the fact I had a bunch of bananas sat there, sadly waiting for a use. No one wants to waste over ripe bananas right? Then I had
cookie cravings - so out came the cookie creation. No brainier.

These cookies ain't just your regular cookies. They're the most super boosting, wholesome, delicious things you could get your mittens on! Made from mainly bananas and oats with extra nourishing add in's. They're easy to make, energy boosting, nourishing, soft, chewy, sweet giving you the perfect healthy snack for the week ahead!

You could even have them for breakie! Cookies for breakfast? YES please!

With this recipe I did want to focus on the types of ingredients I was popping in, and explain to your why I've used them! Hence why these cookies are a particularity great combinations of ingredients for balancing your hormones and busting fatigue which I've been trying to do recently!

So why have I used what I've used?

Maca

Oh you know my love for Maca powder! I've talked about it a damn lot.  With it's sweet caramel tones, I love to add it to smoothies, oats, baking etc. And perfect for these cookies! But my favourite thing about Maca is it's amazing beneficial properties which include balancing and regulating hormones, controlling estrogen levels in the body being really beneficial to women with irregular periods etc. It's also known the be great for increasing energy levels, making you feel more awake and boosting your mood!

Pumpkin Seeds

Pumpkin seeds are one of the newest additions I've been absolutely loving in my diet. They're often used in something called 'seed cycling' along with other seeds known to help regulate periods, hormones and help fertility. Pumpkin Seeds and naturally high in Zinc, manganese, copper, and magnesium known to help build hormones, regulate mood and appetite.  They're also a good source of Iron which helps the body build up for menstruation. Plus they're a source of healthy fat which help the balance of hormones into your cells.

Almonds

Almonds have been known to help hormones especially in women helping things such as acne, infertility, and even PCOS! They're high in vitamin E helping the appearance and condition of your skin. Along with again being high in Zinc and a course of healthy fat!

Now, let's get down to the actual messy, exciting, yummy bit. Grab your ingredients and get yourselves ready for this weeks snacking obsession! If they even last that long...

3 over ripe bananas
1 1/2 cup oats (gluten free if needed)
1/2 cup ground almonds
1/3 cup almonds
1/4 cups pumpkin seeds
2 tbsp tahini or nut butter
1/4 cup maple syrup or sweetener of choice
1/2 tsp baking powder
1 tsp cinnamon
1 tbsp Maca powder
Pinch of salt
1 tbsp non-dairy milk

Pre-heat the oven 160c and line a baking tray with baking paper.

In a small bowl mash your bananas and place to one side.

Then place your oats, ground almonds, baking powder, cinnamon, maca powder, and salt in a large mixing bowl. Roughly chop your almonds and place them in the bowl with the pumpkin seeds.

Mix in your mashed bananas, maple syrup and tahini/nut butter. Mix everything fully together until combined. Then stir in a tbsp of non-dairy milk until a sticky mixture has formed.

Take a tbsp of the mixture and spread out into cookie shapes, it should make roughly 8-9 medium cookies!

Place your tray in the oven and bake for 20-25 minutes until golden brown on top. Take out the oven and leave to cool.

Then dig in with a cuppa and maybe some cheeky peanut butter smeared on top...
