Meat Free Monday - Crunchy Mocha Cashew Granola

Obsessed. The only way when it comes to granola. 

I can't really think of anyone who doesn't like it, it's certainly one of my favourite things to munch on. I love it's crunchy texture and delicious taste. I also love it's versatility, you can pair it with yogurt, sprinkle it over a smoothie bowl, dive into a big bowl with poured over milk, or just grab and handful whenever your tummy rumbles. 

I always make my own granola as shop brought granola can be secretly packed with sugar and full of lots of other hidden ingredients. Plus making your own is super easy and nutritious! I love trying out different flavours and combinations. So being the coffee lover that I am and a never ending chocolate addict, I thought what better than to try out a 'mocha' granola! 

You'll love this recipe, it's quick, easy, chocolatey and bursting with a hint of coffee. By combining the wholesome oats, cacao, maple syrup, coconut oil, coffee, and cashews it all came together perfectly creating one of the best granola's I've made. I mean come on granola that tastes of coffee and chocolate? Heaven.

Feel free to pair this with whatever you fancy, a sprinkle on your morning oats or drown in milk for a nutritious breakfast or layer up a yogurt parfait with some frozen raspberries and a cheeky drizzle of chocolate sauce for the perfect dessert. Now you're talking. 

- 3 Cups Rolled Oats 
- 1 Cup Cashews (Broken in to smaller pieces) 
- 3 Tbsp Cacao/Coco Powder
- 4 Tsp Instant Coffee Mixed with 1/4 cup water (I used Little's chocolate Coffee) 
- 1/4 Cup Maple Syrup/Honey 
- 1/4 Cup Melted Coconut Oil 
- 1 Tsp Cinnamon (Optional) 
- Pinch of Salt 

Pre heat your oven to 160c. Cover a large baking tray with some baking paper. 

Place your oats, cashews, cacao, cinnamon and salt in a large bowl. Then stir in your melted coconut oil, brewed coffee and maple syrup and make sure everything is evenly covered and combined. 

Spread out your granola onto your prepared baking sheet in a even layer. Pop in the oven for 15 - 20 minutes, making sure your stir it throughout making sure it doesn't burn. Bake it until it's golden brown and nice and crispy. 

Take out the oven and allow the granola to cool before storing in your favourite jar or air tight container. If you're feeling a little indulgent you could even stir in some chocolate chips for some extra 'chocolatey' goodness! 

*If you like a little sweeter granola you may want to add a little more maple syrup/honey or if you're not the biggest coffee fan reduce the amount you use by a Tsp.
