Halloween Superfood Series - Vegan 'Cheesy' Sweet Potato Bites

There is no denying in that I absolutely love sweet potatoes. They're such a staple food in my diet, I don't think I could live without them. They're so comforting, delicious and versatile from fluffy mash, to spicy wedges, creamy dips or melt- in - your - mouth sweet chunks. Really there is nothing not to love about them. As winter creeps in there is no denying my sweet potato obsession creeps back in and I find myself munching on numerous sweet potato wedges dipped into hummus for a quick snack or adding them to any dish wherever I can, stews, chilli's, curries, you name it. 

When making these little sweet potato bites I was in heaven after the first bite. I decided I wanted a tiny twist on my sweet potato chunks when whipping up a batch the other day. Rather than my usually spicy sweet potatoes which I live by, I decided to coat and bake them in Nutritional Yeast. Nutritional yeast is one of my favourite things to add to any meal . It's got a slight 'cheesy' flavour and is like a flakey powder form with lots of nutritional benefits. It's a non-animal source of a complete protein, full of amino acids  and contains a good source of vitamin B12 which is usually found in animal foods, just half a tbsp contains your daily vitamin B needs... talk about superfood!  It's great added to soups, stews, pasta, sprinkled over salads or roasted veggies (cheesy kale crisps AMAZING) However I've never added it sweet potato! (ermmmm why?) I just had to give it a whirl. Genius!

Along with there yumminess, sweet potatoes provide excellent nutritional benefits, containing antioxidants, anti-inflammatory properties and blood sugar reducing nutrients. They are also a very good source of vitamin C, manganese, copper, pantothenic acid and vitamin B6 which support energy levels. They're also a great source of complex carbohydrates to add to your diet especially if you're intolerant to gluten. 


Each mouthful you take of these is amazing! (My sister even agreed!) They're soft and packed with that cheesy flavour nutritional yeast gives. They're perfect added to a salad with some roasted chick peas, fresh rocket and chilli roasted sprouts (recipe coming soon!) and cherry tomatoes, a side added to any literally any meal or as a snack with a big dollop of turmeric hummus (another cheeky recipe coming soon!), eh yes please!

Trust me, you're all are going to L-O-V-E these cheesy nutritional yeast sweet potato bites. They’re SO stinkin’ easy to make and taste amazing. I mean, you have to make them. There’s no reason not to!


- 1 large sweet potato 
- 1 tbsp nutritional yeast 
- Olive/rapeseed oil
- Salt & pepper

Pre-heat your oven to 180c. 

Cut your sweet potato into bite sized chunks and place them in a large dish. Drizzle your potato chunk with a little oil and cover with the nutritional yeast. Make sure the sweet potato is nicely covered. Season with salt & pepper. 

Place in the oven and roast for 40 - 45 minutes until soft. Serve and enjoy.
