Vegan Protein Jam Drop Cookies

Oh bloody hell, I have a good old treat for you today my lil chickpeas. I'll be 100% honest I wasn't sure when whizzing together this recipe that it would come out the way I'd hoped. I was extremely sceptical. But oh how I was wrong.

These Jam drop cookies are OUT. OF. THIS. WORLD. And I promise I'm not just saying that. The genuinely are. After making these each bite I made, I actually couldn't quite believe how good they actually are. I swear they're everything you want in a cookie. buttery, crunchy, soft, sweet and indulgent but pretty god damn good for you and your soul.

I swear they're like little heavenly, biscuit, cakey pillows of joy. I just cannot keep my excitement in!!!!!

One thing I adored as a kid were Jammy Dodger biscuits, ahhhhhhh they were my addiction. The biscuit bit oh man. Well I've been on a mission to recreate it slightly. And while yes they may not replicate your typical Jammy Dodger, I feel like these are even better. Yes I said it, even better.

Not only that but the ingredients in these are so easy, simple and guaranteed to give you that feel good factor. Meaning you can't really feel bad for demolish the whole batch.....

The oats and ground almonds create the wholesome biscuit while also making them gluten free, while the coconut oil give them the perfect buttery sweetness along with Missfits Vanilla Vegan protein which I decided to add. This added the perfect scents of vanilla travelling through the cookie, but you could use any plant based vanilla protein here. These cookies are also sweetened naturally with agave syrup however most of the sweetness comes form the tart, gooey strawberry jam which pairs perfectly with the mouthwatering cookie.

I was actually so so excited when I took the first little test of these and they tasted waayyyyy more indulgent than they should be. Is that sad? Probably haha. I swear me and mum looked at each other and mouthed 'Oh my god'. Yep even she was in shock. I mean I surprised we didn't end up eating the whole lot... I swear I'll be making these again and again over the next upcoming months! I think they're perfect for Easter. Oh and you know what would work even better? Some added almond butter. Yes. Now we're talking.

I dare you to try these. Honestly. There will be no regrets.

For the cookies

1 cup oats
1 cup ground almonds 
1 Missfits Vanilla Multitasker Protein Sachet
70g coconut oil, softened
1/4 cup agave syrup
Pinch of salt

For the jam 

1/2 cup fresh strawberries 
1/4 cup water
2 tbsp agave syrup 
1 tbsp chia seeds

Preheat your oven to 160c and line a baking tray with baking paper.
Place your oats in a highly powdered blender/food processor and blitz into a flour. Place your oats, ground almonds, Miss Fits Multitasker Protein, and salt int a large bowl. Mix in the coconut oil and agave syrup and mix together well to form a dough. With your hands grab a little handful of the dough and roll into balls. Place the the baking tray and with you thumb gently press down to create a indentation for the jam.

Next move onto making the jam. Place your fresh strawberries, water and agave into a small saucepan. Heat gently until the strawberries begin to soften, once the berries have broken down mash it with a fork to however smooth or lump you like. Remove from the heat and stir in the chia seeds. Leave to cool and thicken.

Then fill each cookie hole with about 1/2 tsp of jam. Place the tray in the oven and bake for 20 minutes or until golden. Take out the oven and leave the cookies to fully cool before removing from the tray.
